This wine is obtained after long and harmonic traditional aging of Nebbiolo grapes. It is a noble and majestic wine, fine and full of body and structure that perfectly fits among the great red piedmontese wines.
Perfectly matches with red meat, venison, roasts, stews, grilled meat and cheeses.
6 months aging period in bottle.
The fermentation happens at a maximum temperature of 32°C. The maceration of the pomace is prolonged for at least 10 days. The fermentation is over when the product is racked and transferred in stainless steel tanks in which the winemaking process is completed with the malolactic fermentation. The wine undergoes a maturation process for few months, in small Slavonia oak barrels. It is subsequently transferred for 6 months in French oak barriques of appropriate toasting and of second passage. When this period is over the wine is transferred in stainless steel tanks.
