The violets are carefully selected and collected by hand in the hills of Arma di Taggia.
Every single petal is gently moistened with a warm syrup prepared with grinded sugar. The violets are dusted with the crystallised sugar and dried for an entire day.
These glazed violets were prepared in the past by master confectioners to decorate and enrich the marrons glaces.
This bakery tradition has been lost over time but today Agrimontana exclusively brings it back to us in a unique and prestigious way.
