This is the Carnaroli Extra rice produced by the Rondolino family at Tenuta Colombara in the heart of the Vercelli province. It is considered by the most famous chefs and gourmets one of the best rices in the world. Aquerello rice is perfect for any recipe thanks to its larger, firmer, more distinct, tastier and perfectly intact grains that do not stick but absorb the dressing better, keeping intact the starch, vitamins and proteins.
Its remarkable worldwide success is due to the family's experience but also to the ability of combining tradition and innovation in its production. They are the only ones in the world that use both the maturing technique of the rice and a helical process and they finally enrich the grains with the gems.
The rice, matured for 7 years, in order to keep the starch stable that will not disperse during cooking, is subsequently refined by a helix invented in 1875. Acting slowly and gently, it preserves the grains perfectly intact, whitening them in 10 minutes, a longer time compared to the modern processing. Finally the Acquerello rice is re-instated with its precious gems, recovering its most valuable nutritional properties.
