he Asti is produced from the same base grape, Moscato, maintaining the same varietal characteristics. Its significantly different method of production, however, (secondary fermentation in pressure tanks) produces a wine with an alcohol content of 7% vol. and a pressure on bottling of 5 atmospheres, qualifying it as a sparkling wine.

- The filtered product is stored in a tank at controlled temperatures between 0 and 2° C.
- This wine is obtained with the same procedures used in the production of Moscato d'Asti, and just a different fermentation. In the production of Asti Spumante the fermentation is interrupted when the wine reaches the 7% vol of alcohol. This wine is obtained through an overpressing of at least 4ATM, which gives it a very lively perlage.
