Description
The bouquet reveals ripe fruit, blackberries, cocoa, plums and spices; the palate is full and fresh with very soft tannins.

Match
It partners beautifully with the traditional winter Piedmontese dishes, such as boiled meats, sausage and lentil stew, cardoon flan, and the bagna caoda.

Aging
In various French oak and Slavonian oak barrels for around 7/8 months. The wine is bottled in early summer and sold a few months later.
Winemaking
The fermentation lasts around 20 days in steel tanks with frequent pumpovers. The malolactic fermentation in wooden barrels lasts until December.
