Barolo Zonchera and Barbaresco Asij have a very important function to protect and guarantee the quality excellence of Barolo di Bricco Rocche and Barbaresco di Bricco Asili: in fact, in the lesser years the wines aged in the two companies of Castiglione Falletto and Barbaresco, judged not sufficiently suitable to boast the diction of the cru, they are assembled with these two base wines.
Soft, harmonious and velvety. It has a moderate tannic content and is well balanced in its alcoholic and acidic functions.
It has extraordinary drinkability already a few months after its bottling.
- It is ideal with large roasts, game dishes, stews and meats.

- After malolactic fermentation took place (December), the wine is transferred to 300 l oak tonneaux. for 12 months (50% new 50% with one passage) and 12 months in 25 hl barrels. Decanting is reduced to a minimum (2 per year).
- The fermentation, induced by indigenous yeasts, takes place with the hat emerged in steel tanks and ends in 14/15 days. The process ends with a 10/15 days maceration. The temperature follows the progress of fermentation.
