Description The Barolo Gattera D.O.C.G. 2015 Cordero di Montezemolo is produced under an age-old cedar from Libanon.
The bouquet is warm and complex, with notes of jam, raspberry, liquorice, cherry and camphor. Soft and velvety on the palate, with a remarkable structure and fine but persistent tannins.
- It pairs perfectly with game, hare, braised beef, roe deer, wild boar, deer and pigeon. It is terrific with dishes with white truffle, such as a cardoon flan with fondue and duck ravioli.

- It ages slowly for 19/21 months in small French oak barrels.
- The maceration of 6/8 days takes place in stainless steel tanks as well as the completion of fermentation for the next 10/12 days, after which the wine, transferred to small French oak barrels, undergoes the malolactic fermentation.
