Tonnata Sauce (tuna sauce)

The most probable origin of the tuna sauce is to be attributed to Piedmont, where the first document mentioning its pairing with veal with tuna sauce dates back to 1700. Originally the recipe did not include tuna, perhaps the adjective tonnato indicated "cooked in the manner of tuna". The tuna appears, in fact, later in the modern version of 1891.It was prepared by blending the yolks of boiled eggs with capers, some anchovy, oil, white wine and a few drops of lemon juice, while the modern variant involves the use of mayonnaise and tuna.
