Lard is a layer of the subcutaneous fat of pigs raised in the semi-wild state, as in the case of the Agrisalumeria Luiset. To obtain this traditional Italian salami, the slice is dry salted and seasoned slowly, for at least a month, with spices and aromatic herbs.

Great pairing with honey and toasted hazelnuts.
