Description
This cooked salami has been part of the Piedmont tradition for a long time; it was the mainstay of the "merenda sinoira", a hearty snack of people who worked in the fields and vineyards, which was accompanied with strictly homemade bread and a some red wine.

It is packed in natural casing, expertly bound by hand in order to exalt its unmistakable flavours through slow and accurate seasoning. The name "della rosa" comes from the pork's natural casing, called ROSA or BICHIRE' in our region.

The Salami without Preservatives is the first weekly production of the Agrisalumeria Luiset. It is made with perfectly clean machinery and without preservatives. This salami, also called salami without saltpetre, is prepared only with pork cuts, flavoured with spices and aromatic herbs according to an ancient recipe. It is filled in natural casings and seasoned slowly. It is left to mature for several months because as it is without preservatives it has to be dry before it is sold.

This is excellent pork put to soak in oil, so as to become as tender as tuna, with different spices (nutmeg, rosemary, sage, bay leaf, juniper) for at least a week and then trimmed and put in the jar for a greater shelf life.
