From the incessant research that has always distinguished Marolo for the most particular techniques and methods of distillation, the new Solera di Marolo Grappas are born.
The Solera method, very popular for Rum production, consists in creating a particular blend of grappas aged in barriques with different ages of ageing. The barrels are arranged in pyramidal stacks: the highest row contains the youngest grappa while the lowest one, called Solera (from the Spanish «soil») the oldest. Every year a part of the Solera is bottled and the barriques are filled with the distillate from the upper row.
