The soft wheat flour 0 by Mulino Marino is obtained from two piedmontese organic farming methods such as natural stone milling and cylindrical milling. The cereal are selected following quality, safety and biodiversity criteria and the grains are grinded in the respect of their original characteristics with no addition of food preservatives, stabilizers and additives. Ideal for preparing pizza, bread, biscuits and fresh pasta.
From the respect of the artisanal milling tradition of Mulino Marino, born the cheesecloth (sifted) flour : the whitest flour achievable through the millings with natural stones.
The Cheesecloth Buratto flour is a biological soft wheat type 2 flour, obtained without the addition of preservatives, stabilizers and other additives. Particularly appreciated being a natural and raw product, these former qualities are due to the light part of fibre and grain’s germ that are preserved after the processing and that characterize this flour in respect to the others.
The durum wheat, differently from the soft wheat, is characterized by higher protein contents and sharp, hard grains. Mulino Marino use the cylindrical milling based on a similar scheme of the natural stone milling. The flour is never re-milled and the steps to obtain the final products are reduced to the minimum.

The "Setaccio" is the semi-whole wheat flour wheat Mulino Marino.
The grain is washed, cleaned and ground to natural stone, also the part is removed bran (fiber) thicker, to obtain a flour in all and for all integral but with a lesser amount of bran.
The grinding by means of the stones allows instead to obtain the presence of the germ in the flour and to obtain it in a single step without heating. This procedure means that the flour is more nutritious, more digestible and more fragrant.
