Description

The most probable origin of the tuna sauce is to be attributed to Piedmont, where the first document mentioning its pairing with veal with tuna sauce dates back to 1700. Originally the recipe did not include tuna, perhaps the adjective tonnato indicated "cooked in the manner of tuna". The tuna appears, in fact, later in the modern version of 1891.

It was prepared by blending the yolks of boiled eggs with capers, some anchovy, oil, white wine and a few drops of lemon juice, while the modern variant involves the use of mayonnaise and tuna.

Ingredients

Sunflower seed oil* 60%, tuna 15%, pasteurized egg* 13%, capers* 3%, extra virgin olive oil* 3%, anchovies 1%, wine vinegar*, lemon juice*, cane sugar*, sea salt. Acidifier: Lactic acid. Thickener: xanthan gum. *81% - *Ingredients from organic farming.

Cotechino 500g Raspini Salumi

Cotechino began to spread towards the end of the 18th century in Piedmont, where it became an integral part of the winter diet of the lower classes. The cotechino by Raspini Salumi is a product made with raw material from selected Piedmontese farms and subsequently processed according to the rules of the Piedmontese tradition. Cotechino is good when, after at least an hour and a half of cooking, it is easy to slice and holds the slice, which must be compact, with uniform granulometry and a pinkish color tending to red.
