Cacio e Pepe is a typical Roman condiment, which apparently seems simple and easy to make, but it is not, because it is all a matter of balance of the ingredients.

Originally from Rome, it is made with cheese (cacio) and pepper and, according to the typical Roman recipe, it is used to season spaghetti. Brezzo reinterprets the recipe by proposing this Risotto Cacio e Pepe, super!
