This salami, also called salami without saltpetre, is prepared only with pork cuts, flavoured with spices and aromatic herbs according to an ancient recipe. It is filled in natural casings and seasoned slowly. It is left to mature for several months because as it is without preservatives it has to be dry before it is sold.
