This type of Rubatà (curved breadsticks) features the strong, enveloping flavour of Taggiasca olives. To be enjoyed on its own as a delicious appetizer.
These mini breadsticks are full of lightness—made without oil or lard, they have a very delicate flavor suitable for every palate. The light breadsticks complete the rich range of hand-stretched breadsticks by Mario Fongo. Using water instead of fats gives this product a unique lightness, while the handmade dough and long natural leavening process ensure the same delicious taste as traditional breadsticks, with a crispness that lasts over time.
Rubatà breadsticks, thanks to their processing which involves the rolling of the dough, have a more compact consistency. The term “Rubatà" comes from the Piedmontese dialect, which means "fallen". It is the oldest shape of a breadstick and legend has it that it was baked for the first time at the court of Savoy in 1679 for Vittorio Amedeo II, upon the instructions of his doctor as Vittorio was apparently unable digest the soft part of bread.
Instead of the lard that usually makes the breadstick softer, Mario Fongo has replaced it with extra virgin olive oil that aromatizes it a little more.To be enjoyed on its own as a delicious appetizer.
