Description
This cooked salami has been part of the Piedmont tradition for a long time; it was the mainstay of the "merenda sinoira", a hearty snack of people who worked in the fields and vineyards, which was accompanied with strictly homemade bread and a some red wine.

It is filled in natural casings and seasoned slowly. It is left to mature for several months because as it is without preservatives it has to be dry before it is sold.
