Description

Tomatoes cut into pieces with their pulp, permits us to obtain a more rustic consistency. It is the tomato which is the closest to that of fresh. Ideal for delicate dishes or with fish, delicious on toast with a little oil and salt.

The preparation begins with a fine biological acacia honey which is diluted in water and slowly fermented dosing both air and temperature. The acidity is slightly less in respect of a classic wine vinegar and its tolerance is more marked.
