The cotechino by Raspini Salumi is a product made with raw material from selected Piedmontese farms and subsequently processed according to the rules of the Piedmontese tradition. Cotechino is good when, after at least an hour and a half of cooking, it is easy to slice and holds the slice, which must be compact, with uniform granulometry and a pinkish color tending to red. The product is gluten free and milk and derivatives.
