The "Furia Italiana" flour is a type 0 soft wheat flour, the best for making the great leavened products of the Italian tradition such as: puff pastry, brioches and croissants, panettone, pizzas and focaccias.
This is due to the large amount of protein it contains, which in contact with the liquid produces gluten. The latter retains the leavening gases, allowing the dough to develop to considerable size during cooking.
